Perfect Fish for Our Chips!
As you may have known, here at Pajo’s we offer three different kinds of fish; cod, halibut and salmon. All our fish is direct from the West Coast fishing boats to our kitchens. No farmed fish here! Have a quick look below and learn where your favorite fish comes from.
Pacific Grey Cod
Pacific Grey Cod or Pacific Cod is a BC local fish caught in the Pacific Ocean off our West Coast. Once cooked, it becomes flaky with pure lean white and mild tasting fish that has been a favorite of Western and Asian cooks alike. Apart from that, our cod is a good source of low fat protein, phosphorus, vitamin B12 and Omega3 makes it not only a perfect fish for our chips but also a super healthy protein source! Pacific Halibut
Another local favorite fish we cannot miss is the Pacific Halibut, the biggest flat fish in the ocean! Yes, our Pacific Halibut is considered one of the most delicious table fish indigenous to the coastline of BC. Its lean and mild tasting flesh comes with such firmness once fully cooked. Pacific Sockeye Salmon
Although there are six salmon species, the most common kind we find in fine restaurants is sockeye salmon due to its day-glow orange flesh which renders more taste to the dish. Sockeye can be found mainly in the Fraser, Nass and Skeena Rivers as well as Smith Inlets. And thus, sockeye is one of BC’s favorite local fish dishes. Here, we only use wild pacific sockeye salmon to serve you at our fish and chips venues. Our story begins in 1985, where founder Patricia Branch and then business partner Joan concocted the idea behind Pajo's - a stand in Steveston's Wharf serving the finest fish and chips in the West.
